Abstract

The appreciation for food culture, the search for sustainable production models, access to and consumption of healthy foods are approaches that pass through Agroecology and Sovereignty and Food Security. Plants known as roselle, with functional qualities and for use in the cooking of several regions, was the objective of this study.
