Abstract

As a consequence of many food scares, the hegemonic agro-food system shows some doubts that point out changes from industrial quality, it means standard, far away from customers, to local and traditional food associated with culture and place of origin. These agro-food system changes require studies and researches about modes and scale of food production, relationship between producers and consumers and yet the State role in this new surroundings. Another point that requires more understanding is the proper agro-food system and its relation to rural development strategies. In this paper, we discuss the food quality subject, especially in relation to traditional food environment production. We attempt to show as new approaches and measures have emerged close to traditional food enhancement, mainly when associated with peasant farm production, in short scale.
